Ping Tung Eggplant

These beautiful eggplants get their name from a county in Taiwan called Ping Tung, where they were first grown. Each fruit can grow to 18" long and 2" in diameter, with a bright purple skin that can be left on when cooking. It's particularly well known for its high, constant yields, and for being dependable even in periods of extreme heat. It has an excellent mild flavor without a trace of bitterness. Chop up and add to your favorite sauteed veggie dishes.  65 days to maturity.
