Sicilian Bi-Colour Eggplant

This Italian heirloom produces enticing lavender fruits with white blushing, adored by chefs and home gardeners alike for their creamy texture and no bitterness. Harvest when softball sized with slight ribbing. 

Transplant outside after all danger of frost has passed. Plants may require staking. When starting seeds, keep soil temperatures between 65 and 70° F. This crop requires full sun and should be planted in rich, well-draining soil. Water well to ensure good germination. Once germinated, eggplants need at least one inch of water per week. Harvest fruits when the skin is shiny.
